The Desert Menu
Our meals are an extension of the curriculum. Every ingredient is either grown in our labs, foraged locally, or sourced from regenerative cooperatives.
Meso-American Infusion
Tepary bean hummus with wild oregano, foraged mesquite-flour bread, and a rainbow of seasonal micro-greens dressed in prickly pear vinaigrette.
Snack Rotations
Smoked local Medjool dates with sea salt, sprouted almonds, and chilled infusions of wild desert lavender and agave.

Do I need prior permaculture experience?
No. This workshop is designed to be accessible for beginners while providing enough depth in biodynamics for advanced practitioners.
What is the physical intensity level?
Moderate. We will be outdoors for 10+ hours a day. Activities include walking uneven terrain, light digging, and swale surveying.
What is the refund policy?
Full refunds are available up to 30 days before the workshop. Within 30 days, we issue a 50% credit toward future lab workshops.
Are scholarships available?
Yes. We offer two full-tuition scholarships per cohort for local indigenous stewards and young regenerative farmers. Please email us to apply.
